Food pairing: Parmiggiano Reggiano 36 months

Blend of two aromatic grapes, the Traminer Aromatico (85%) and the semi-aromatic variety of the Sauvignon (15%). The grapes come from two completely different territories, Capriva and Oslavia, and this makes for an incredibly balanced wine. The harvest of the two varieties takes place at the same time, and the grapes are then dried on racks for about one month, exposed to the breeze blowing from mount Sabotino. Thus they loose 60% of their water and concentrate the sugars and the flavors from the berries.
